原料:
主料:猪舌一条;
调料1:大葱约15克,生姜约10克,大蒜3至5瓣,八角2颗,桂皮1小段,花椒10余颗,香叶1片,陈皮2片,老抽2大匙,生抽1大匙,冰糖约15克,料酒1大匙,盐适量;
调料2:蒜茸适量,醋1小匙,生抽1小匙,芝麻油0.5小匙,白糖0.5小匙,辣椒酱1大匙;
做法:
1、准备好原料;
2~3、将猪舌放入清水中,大火烧开,煮约5分钟;煮至猪色表面的舌苔发白;
4、捞出用刀仔细刮洗干净(舌头表面那层白色的舌苔一定要全部刮净);
5、将调料1全部放进砂锅内,加入适量的水,烧开后煮约5分钟;
6、然后放入处理好的猪舌,卤煮约40分钟后关火,可让其在汤汁中再浸泡至晾凉会更加入味;
7、将调料2放入小碗中,再加入1大匙卤猪舌的汤,拌匀成调味汁;
8、晾凉后的猪舌捞出,切片装盘;
9、淋入调味汁即可。
