原料:五花肉(较瘦)、莲子、花椒、干姜、桂皮、大料、香叶、洋葱、生抽、老抽、白糖、盐、红葡萄酒、清水、油
做法:
1、肉切成块,冷水冲洗。冷水上锅,大火烧开后,捞出,煮过肉的水弃之不用;
2、将生抽和盐和红葡萄酒加少许清水兑一碗料汁;
3、莲子用冷水慢火煮过;
4、热锅倒油,放入白糖,开小火炒化;
5、放入肉块,翻炒,每块肉上都裹上糖色;
6、翻炒少许后将花椒、干姜、桂皮、大料、香叶、洋葱一同放入,翻炒;
7、出香味后,倒入碗汁,再放入少许老抽和清水,大火烧开后,小火慢炖;
8、放入莲子。再用小火炖煮40分钟左右,汤汁变少变粘稠,红烧肉和莲子变软糯,即可。
